Best Ginger Sandwich Cookie Recipe

Enjoy holiday flavors with this recipe for ginger sandwich cookies. It’s the best!

The holidays are a particularly delicious time of year, and you deserve to be able to savor them. The good news is you can do just that with the best ginger sandwich cookie recipe ever! To make these cookies, you’ll need:

  • 1 ½ cups of flour
  • 2 teaspoons of ground ginger
  • 1 teaspoon of ground cinnamon
  • 1 ½ teaspoons of baking soda
  • ¼ teaspoon of salt
  • 16 tablespoons of unsalted softened butter
  • ¾ cup of granulated sugar
  • 1 large room temperature egg
  • ¼ cup of unsulfured molasses
  • 2 cups of confectioners’ sugar
  • 1 ½ tablespoons of freshly squeezed lemon juice

Preheat your oven to 350 degrees F and line two baking sheets with parchment paper.

In a large mixing bowl, combine the flour, ginger, cinnamon, baking soda, and salt. In another bowl, use an electric mixer to beat 10 tablespoons of butter with the granulated sugar until fluffy. Beat in the egg and the molasses, then slowly add the dry mixture.

Drop tablespoons of this dough onto your baking sheets (you’ll probably have to bake multiple batches) and bake for 10 minutes. Rotate your baking sheets and cook for another 10 minutes. Let it cool completely.

Meanwhile, use your electric mixer to beat the remaining 6 tablespoons of butter with the confectioner’s sugar until whipped and fluffy. Add in the lemon juice.

Spoon about a tablespoon of this mixture onto one cookie, top with another cookie, and press until the filling spreads to the edges. Then, enjoy these scrumptious ginger sandwich cookies!
